Pumpkin Pancakes

Part of our Christmas advent was to have Pumpkin Pancakes by our tabletop Christmas tree.  Both pancakes and moment were entirely pleasant.

INGREDIENTS

1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 tablespoons vegetable oil
2 tablespoons vinegar
2 cups all-purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt

DIRECTIONS


In a bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in a separate bowl. Stir into the pumpkin mixture just enough to combine. 

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Sausage Quiche

9 inch pie shell, unbaked
4 oz. mozzarella cheese, shredded
3 eggs, beaten
1/4 tsp. salt
6 oz. sausage, cooked, drained and crumbled
1/2 c. milk

Preheat oven to 375 degrees. Line unbaked pie shell with 1/2 cheese. Top cheese with cooked sausage. Cover with remaining cheese. Combine eggs, milk, salt and pepper; beat well. Pour over ingredients already in pie shell. Bake for 30 to 35 minutes. Serve hot.

Buttermilk Waffles

Oh, waffles with strawberries and whipped cream. A Melville breakfast classic, brought to us, like so much of our loveliness, from KT (now) C.

INGREDIENTS

4 eggs, separated
4 c flour
1 T baking soda
1 t salt
1 cup oil
4 c buttermilk

DIRECTIONS

1. Combine dry ingredients, then add oil, buttermilk, & egg yolks
2. Whip egg whiltes (for fluffy batter) and fold into batter.
